Fab Food Friday Special Edition: Meatless Monday- Quesadillas


Continuing to kick off summer, here is a quick recipe for dairy-free veggie quesadillas! Make a few and re-heat for work or a quick dinner option later in the week. Send me your comments here or via Twitter @Stormsez and let me know some of your fave recipes! Enjoy!

I got this great quesadilla maker for a holiday gift and love it! I can't have dairy so one may think I will never use it for myself? So not true! This is a great tool you can plug on your counter top so no heating the oven especially during this last wave of hot weather and throughout the summer.

I made mushroom and asparagus quesadillas with mozzarella dairy-free cheese but you can use any veggie and cheese combo. I use Daiya cheese, by far the best vegan meltable cheese , (I used this in an earlier post for Pizza Bites) and a wheat tortilla for the shell. You can substitute for corn, multigrain or original tortillas.
Recipe:
1 cup of Mushrooms - I used frozen Shitake from Whole Foods (I heat them up either in the microwave or stove top, about 1-2 minutes depending on your stove or microwave) then set aside to cool and drain.
1 cup Asparagus spears - I used again frozen from Whole Foods (I heat them on stove top in water until tender - usually approx 4-5 mins. Then drain and set aside to cool and then cut up into smaller pieces once cool.
1/2 cup of Daiya cheese - I used Mozzarella flavor but they also have Cheddar or Pepper jack available.
Prep the maker with spraying of light cooking spray on both plates then plug in to heat up once ready to begin assembly.
Once the veggies are cooled and you have cut up the asparagus, place one tortilla on the bottom and assemble the mushrooms, spears and sprinkle the chesse over the top, making sure to only use the very most middle of the tortilla in order to avoid spillage over the sides. Once completed, place the other tortilla over and then close the lid. Depending on how well done you want the quesadilla, it normally takes just approx. 5 minutes to make a nice light brown marks on the top of the tortilla. Use a spatula to remove and place on a plate to cool. If you plan on making more just repeat the steps again minus the cooking spray as typically you can cook 2 before needed to re-spray.

You have endless combos with this meal as you can swap in whatever your fave veggie is or even add beans such as black beans (just make sure they are cool and you mash the beans in the center of the tortilla to avoid bulkiness or spillage over the sides. For meat lovers, you can always add a meat option to this as well again, just make sure the meat is very well ground.
