For my 24th post for the #30IN30 post is a great snack, Mini
Oatmeal Almond muffins. Continuing to highlight dairy-free options, this recipe
used Almond Milk instead of regular milk. I used the Jiffy oatmeal box mix, substituted
the Almond Milk (I used 365 Brand Vanilla flavored from Whole Foods) plus I
added in 1/8 of a cup of French Vanilla syrup (Target's Archer Farms brand) for
an extra sweetness along with the one egg needed in the directions.
. For the mini mold, I used my Mini Cupcake Maker I got from Target. Just spray some cooking oil in the seven molds and pour the batter in. One box mix yielded 14 mini muffins! I like to make these on Sundays so I have them on hand for the week to take to work with me. Just store in a storage container in the fridge and take out as needed!
