wheat waffles with my cute waffle stick maker I got from Target for $20.00.
It’s a nutritious snack especially when I am feeling lethargic at my day job around 3pm. With my lactose intolerance, I substitute regular milk in the directions for coconut milk (you can use almond milk instead if you don’t want to use coconut milk) along with one egg and you can also use organic extracts such as orange, almond, or banana to add some flavor without the sugar and alcohol. I skip the oil in the directions I add coconut “butter” spread instead or you can use anything comparable. I normally make these on Sunday night and save to take a few out each day for my afternoon snack which I add with fresh or frozen fruit and a small amount of syrup or you can use agave syrup.
