Fab Food Friday: Smoothie Verde
Day 3 of the #30IN30 Challenge and it's also Friday so who couldn't use a boost in energy but in a natural and healthy way! Due to my "strong" adverse reaction to dairy, I have had to learn to develop a new way of eating and cooking since 1993. My nickname to most is the Queen of Substitutions! One of the things I like to make is smoothies. Because most traditional smoothies involve dairy, here is an alternative recipe which also helps you get your green veggie intake. This particular recipe, I was inspired by Russell Simmons watching him drink a green smoothie on a past episode of his reality show. I get all my ingredients from Whole Foods which, for me, is the best place to purchase all my alternative food needs.
Smoothie Verde:
(Makes a Single Serving)
Prep 10 Minutes
1 Cup of Coconut Milk - can be flavored or original- This brand shown is my personal favorite.
(You can use Rice Milk or Almond Milk as a substitute)
1 Cup of Juice or Nectar, I like to use Pear Nectar or Lychee
1/2 Cup of Fresh Kale (usually about 3-4 large leaves or you can use Baby Spinach as a Substitute)
1/2 cup of fruit such Granny Smith Apples- (sliced, and chopped up into small pieces)or Kiwi, Mango, Pineapple,or Peaches (can be frozen fruit, just thaw or pop in the microwave for less than 40 seconds to aid the thawing)
Optional-
You can add 2-3 tablespoons of yogurt for a more hearty or filling option. Here is a new option of Greek Style Almond Milk Yogurt from my favorite brand So Delicious
Also another option to boost your fiber and protein intake is Hemp Powder which doesn't have any Soy or Whey protein, which I personally can't have. You can add up to 4 tablespoons of this powder.
You can add a teaspoon of honey or Agave Raw Nectar for taste to sweeten it a bit.
Put all these ingriedients in a blender and voila! A great snack for any part of the day or a great treat after a workout. Enjoy and let me know what you think @Stormsez.
